Summer Cold Beetroot Soup with Kefir & Yogurt

Refreshing beetroot soup with kefir and yogurt. Kefir is known as super yogurt as it contains far more probiotics.

Ingredients: 300ml of kefir 300ml of natural yogurt 2 eggs 1 small onion 2-3 garlic cloves Bunch of fresh beetroots (about 5 medium sizes) 0.5 cucumber 3-4 radishes Dill to garnish 1 spoon of butter Salt and pepper to taste Method:

  1. Boil eggs

  2. Cut onion and garlic into small pieces

  3. Grate beetroots

  4. Fry onion, garlic, and beets, gently with butter for about 20 mins. until soft

  5. Mix kefir and yogurt in a big bowl

  6. Grate cucumbers and cut or grate radishes into small pieces

  7. Mix everything from your pan in a big bowl

  8. Add cucumbers and radishes and salt and pepper

  9. Place the bowl in the fridge for at least 30 mins. so it cools down

  10. Serve cold with egg and dill
