Millets are coarse grains and a repository of protein, fiber, vitamins and minerals. They include sorghum, finger millet, foxtail millet, kodo millet, little millet, pearl millet, proso millet and barnyard millet. Eating healthy can seem like a task with the easy availability of junk food all around us. A good way to get on the path to good health is to replace your unhealthy eating habits with healthier options. Millets are available in a variety of types, with each having its own health benefits. Consuming millets as part of your daily diet is not a new concept especially in India. But due to convenience food availability people have forgotten the taste and recipes of millets. The New Year 2021 resolution must be to improve our health and well being. Here is a healthier choice for a healthier and happier life.
Veg Barley For Breakfast
Ingredients:
Barley Millet – 100 grams
Carrot – 1 (grated)
Green chilies – 2 (finely chopped)
Salt – to taste
Oil – 1 tsp
Water - 300 ml
French beans – 50 grams (finely chopped)
Onion – 1 Medium size (finely chopped)
Method:
Heat oil in a pan. Add green chilies, onions and sauté it for 5 minutes. Now add grated carrots and French beans. Cover it with a lid for 2-3 minutes till the vegetables are nicely cooked. In another pan heat water and add washed barley to it. Once it is cooked, mix with the vegetables and add salt. Give it a nice stir and serve hot with tomato ketchup
