Vegan, Nut free healthy Carrot cake topped with lemon custard! This carrot cake turned out amazing! I loved making this and it is definitely a family favorite! Everyone loves it and you will too!
Carrot cake Recipe:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
2 cups blended carrots
1 cup coconut sugar
2 flax eggs
Icing:
1 teaspoon vanilla
1 tablespoon lemon juice
4 tablespoons plant milk
Method:
Preheat oven to 200C
Add all of the ingredients to bowl and mix well!
Transfer into a medium baking tray and place in the oven for 20 minutes or until your knife comes out clean!
Mix ingredients for icing. Then once cake is cooled, top with lemon custard and place in the freezer for 20 minutes or until custard has set.
