as someone who is a vegetarian and pretty much always makes it a point to eat entirely plant based, I've had some trouble finding ways to eat French toast that aren't so... boring.
although most vegetarians eat eggs, I've never really been a big fan off them which has always made French toast one of those things that is just a complete hit or miss. I mean, I really can't think of many things worse than going out to a local diner, ordering a plate of French toast and expecting this hot, cinnamon sugary mixture to come out... and getting a piece of toast with a scrambled egg hanging off the side. ugh.
so, I decided to take matters into my own hands here and find a way to enjoy one of the very best breakfast foods probably ever, just without the egg. this batter mixture is made from coconut milk and bananas! and even better- the batter is so good that I actually use it was a syrup, too. absolutely amazing and entirely plant based.
Ingredients:
☼ 4 slices of bread (I use Dave’s Killer Bread: 21 Whole Grains and Seeds)
☼ 1 overripe banana, mashed
☼ 3/4 c full-fat canned coconut milk
☼ 1 tbs maple syrup
☼ 1 tsp vanilla extract
☼ 1/2 tsp ground cinnamon
☼ cooking spray
☼ fresh berries, for topping
How To:
begin by blending together your banana, coconut milk, maple syrup, vanilla extract, and cinnamon until the mixture becomes smooth and creamy. pour the batter out into a shallow bowl + coat both sides of your bread.
air fry until crisp (highly recommended) or cook on a well greased pan over medium heat for 4-5 minutes on both sides. add some fresh fruit + drizzle with the left over batter for some extra mapley, banana-y, coconutty goodness.
Note:
if you are using a pan instead of an air fryer make sure that your pan is greased... and when you think it's greased, grease it again! the heat brings out all of the sugars from the fresh fruit and makes the mixture super thick and sticky. you don’t want to deal with that mess- take it from me!
