Uttapam is a very popular South Indian recipe. In English it could be called a salty thick Pancake. It’s one of the most loved breakfast recipes of South Indian cuisine and it's served with coconut, chutney (sauce), sambar, gunpowder spice (Milagai Podi), or tomato chutney (sauce).

Ingredients for Uttapam:
1 Cup Black Gram (Urad Dal in Indian words)
3 Cups Raw rice
1 Tsp Ginger Paste
3 Onions (chopped)
2 Tsp Coriander leaves (chopped)
2-3 Green Chillies (chopped)
Salt to Taste
Preparation:
Wash black gram & rice separately.
Soak in water for 3 hours separately in two bowls.
Blend them separately to smooth paste using some water.
Mix them & add the salt.
Keep it for the whole night.
Mix the batter well next morning till it is sufficiently thick.
Mix the green chillies, onion, coriander leaves and ginger in a bowl.
Heat the pan & brush some oil on it.
Pour some better on it with a ladle & spread it to a thick circle.
Sprinkle some onion mixture on the top side overturn the Uttapa (uttapam) after a mixture.
Cook on the other side for another minute by sprinkling little oil on the edges of the Uttapa.
When it is roasted enough, put it down on a plate.
Serve it with sambar or coconut chutney.
Its outer layer is crispy whereas the inner layers are spongy & soft. Low in fat but high in flavours. It is a very easy & quick homemade breakfast option which is ideal for people who prefer a low fat diet.
