Tess’s Hot Milk Cake

Ingredients:

4 large eggs, room temperature

2 cups sugar

1 teaspoon vanilla extract/one vanilla pod

2 1/2 cups all-purpose flour

2 1/2 tsp baking powder

1 tsp of baking Soda

11/4 cups milk

1-2 tablespoons butter (cubed)


Instructions:

Preheat oven to 350F/180Deg

In a bowl, beat or whisk eggs on high speed for 7 minutes or until thick and lemon-colored.

Gradually add sugar, beating until the mixture is light and fluffy.

Add the vanilla essence.

In a large bowl, combine flour, baking soda, and baking powder, and gradually add the egg mixture, beating at low speed until it's smooth.

In a small saucepan, heat milk and butter just until butter is melted.

Gradually add to the batter, and beat just enough until it is combined (do not overbeat the cake mixture).

Pour into a greased baking pan of your choice. Bake until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

Let it cool, then dust with some icing sugar and enjoy it with some tea, coffee, or hot milk.
