We've all had our fair share of toast, but have you heard about sweet potato toast?! This new trend is something that has been FILLING up my timeline lately, and I figured it was about time to try it out myself, despite how weird it might have sounded...
So! I went to the store and bought the biggest- and I mean the BIGGEST sweet potato I could find, topped it with pretty much whatever I had lying around that looked interesting + ate wound up eating the whole thing! As it turns out, sweet potatoes are nothing but perfect, no matter what you top them with.
Ingredients:
☼ one large sweet potato, baked + halved
☼ Greek yogurt (I used Chobani’s banana maple oat)
☼ one handful of blueberries
☼ a dash of cinnamon
☼ chia seeds, for sprinkling
How To:
Using a knife, poke some holes in your sweet potato + bake at 375° for one hour. Halve and simply top with your yogurt, blueberries, cinnamon and chia seeds- or whatever else you might like to try out!
