Sweet Chili Chicken Thighs in Onions

  • 6 Vidalia onions

  • 2 cups water

  • 2 bouillon cubes

  • 6 boneless skinless chicken thighs

  • 1 bottle of 10oz sweet chili sauce


  • Place the 6 onions water and bouillon cubes in the slow cooker on low for 6 hours

  • While that is cooking marinate the chicken thighs in the sweet chili sauce

  • Once the timer on the onions expires - sear the chicken thighs in a cast iron for 2 minutes a side - remove from the pan and add the onions and any chili sauce that is left

  • Place the chicken thighs back on top and finish in the oven for 30 minutes at 350 degrees
