STRAWBERRY AND GOAT CHEESE CROSTINI TOPPED WITH PROSCIUTTO

Ingredient Checklist

  • 1 (10 ounce) log goat cheese, sliced into 1/4 inch rounds

  • 1/2 cup good olive oil plus more for drizzling

  • 1/4 cup torn basil

  • kosher salt and fresh black pepper

  • 4 sprigs fresh thyme

  • 1 sourdough or french baguette, sliced

  • 2 cups fresh strawberries, sliced

  • 6oz Prosciutto torn

  • Zest of 1 lemon

  • Juice of 1 lemon

  • honey for serving

Step 1 - Combine in a bowl the cheese, olive oil, lemon zest and juice and thyme and let sit for 30 minutes in the fridge

Step 2 - Well that is resting, slice your bread down the middle the long way so you get nice open faced pieces and toast in the oven at 375 degrees until it gets nice and crispy

Step 3 - Once removed let it cool

Step 4 - Smear the cheese mixture onto the cooled bread covering it completely to the edges

Step 5 - Top with the sliced strawberries

Step 6 - Add the torn prosciutto and basil

Step 7 - Drizzle with the honey and enjoy every bite
