Cooking after work can seem like a chore if you don't have a few quick and easy recipes to choose from. Anything cooked all in one pan is my favorite way to cook after a long day!
This one is quick and delicious, here’s the details;
1 head broccoli cut bite size
1 lb. shrimp
1 bell pepper sliced, red, yellow or orange is best for this dish
2 to 3 Scallions (green onions) sliced
For the sauce;
3 tbsp. soy sauce
2 tsp grated ginger
1 tbsp. Sambal Oelek sauce
1/2 tsp sesame oil
1 clove minced garlic
Pinch dried basil
Preheat oven to 450F
Prep your sheet pan with non stick cooking spray
Place broccoli on pan and drizzle with a bit of oil, toss to coat, roast 10 min.
While that’s roasting, devein shrimp, add all sauce ingredients to bowl with shrimp, stir to coat.
After 10-12 minutes remove sheet pan with broccoli from oven, add peppers, shrimp and all the sauce.
Return sheet pan to oven until shrimp cooked, 5 mins or so, they will be pink with no grey edges.
One final stir after sprinkling with scallions and dinner time!
