Sausage Gnocchi Soup

Here's a quick, delicious, and hearty soup made all in one pan!


Ingredients

3 links Italian sausage, casing removed

2 carrots cubed

1 celery chopped

1 onion chopped

1 zucchini cubed

1 bunch of chard or Tuscan kale, remove stems, and chop

2 garlic cloves chopped

Scallions or chives for finishing

Small sprig rosemary, or 1/4 tsp. dried

1 tsp. Italian seasoning

1 tbsp. tomato paste

1/2 cup wine, red or white

4 cups stock, chicken, or vegetable (no salt)

1 package potato gnocchi


Directions

  • Brown sausage in a heavy pot until really brown.

  • Add onion, carrot, celery, zucchini, cook until softened.

  • Add tomato paste, Italian seasonings, and garlic, stir until paste is incorporated.

  • Deglaze with wine.

  • Add the stock, bring to boil, reduce to simmer.

  • Add chard and rosemary.

  • Add 1 tsp. kosher salt

  • Simmer for 30 mins.

  • Bring back to boil, add the gnocchi, cook per package directions, generally a few minutes. Gnocchi will thicken the soup.

  • Taste for seasoning, you might need a bit more salt if it does not taste amazing.

  • Finish with scallions or chives, grated Parmesan cheese, and a drizzle of olive oil.
