A Roasted Shrimp Dinner, ready in minutes, light and delicious! Served with buttered orzo.
1 lb. shrimp
1 head broccoli, but into bite-size pieces
1 lemon, zested
2 tsp. minced garlic
1/2 tsp. paprika
1/2 tsp. dried oregano
1/4 cup panko breadcrumbs
Preheat oven to 425F.
Soak wooden skewers, fully submerged in water, until ready to use.
After cleaning shrimp, place in a zip bag with enough olive oil to generously coat shrimp, salt and pepper, paprika, dried oregano, garlic, and lemon zest (no juice)
Place shrimp in the fridge for 1/2 hour
Place broccoli on a sheet pan, drizzle with olive oil, sprinkle with salt and pepper, mix together with your hands until equally coated. Place pan in the oven for about 10, minutes or until browned. Sprinkle with panko bread crumbs and return to oven for 1 minute to brown crumbs.
Skewer shrimp and roast a few minutes on each side under the broiler, or on a grill.
Simple buttered orzo rounds out the plate.
