Red Velvet Jars (Valentine’s Special)

As Valentine's Day approaches why not celebrate with some Red Velvet Jars...to make it look romantic and beautiful..❤️❤️

CAKE INGREDIENTS🧁:

This yields 10 to 12 cupcakes 🧁 1 cup cake flour 2 Tbsp cocoa, unsweetened 1/2 tsp kosher salt 2/3 cup vegetable oil 3/4 cup granulated sugar 1 medium egg 1 tsp pure vanilla extract 2 Tbsp red food coloring drops 1/2 cup buttermilk 1/2 tsp baking soda 3/4 tsp white vinegar


CREAM CHEESE FROSTING: 8 oz cream cheese, softened 3 Tbsp butter, softened 3 3/4 cups confectioners' sugar, sifted 2 tsp vanilla extract, clear

METHOD:

👉For the Cupcakes: Preheat oven to 350 degrees. Line 12 cupcake tins with paper liners or spray pan with nonstick cooking spray. (Or you can use this batter to bake a cake, it’s your choice). 👉Sift together cake flour, cocoa powder, and salt. 👉In the bowl of a stand mixer fitted with the whisk attachment, combine oil and sugar until well-blended. Add egg and mix until combined. 👉Turn your mixer down to the lowest speed and add vanilla, then slowly add in the food coloring. Add the colour slowly and accordingly to how dark you want it. To get a dark red shade, I used about 1 tablespoon of gel dye or beetroot powder. 👉Add flour mixture alternately with buttermilk in two batches; scrape down the side of the bowl. Continue mixing until just combined, taking care not to over mix. 👉Place baking soda in a small dish, stir in vinegar and add to batter with the machine running. Beat for about 8-10 seconds (do not over beat). 👉Using a medium ice cream scoop (about 3 tablespoons), divide batter into the cupcake mould and fill each about 2/3 full or just bake a cake.

👉Bake for 20-24 minutes or until a toothpick inserted comes out clean. Do not over bake.


CREAM CHEESE FROSTING:

👉In a bowl of your stand mixer fitted with the paddle attachment or your hand mixer, cream together cream cheese and butter until well combined. 👉On low speed gradually add the icing sugar until it is thoroughly incorporated and smooth. 👉Add vanilla and mix to combine.


HOW TO ASSEMBLE THE JARS:

👉Slice cupcakes to create layers or crumble the cake into crumbs.

👉Each cupcake will yield 2-3 layers, depending on how thick you want your layers, or just crumble them and then layer them. 👉First, place one cupcake layer into the bottom of your jar, pipe a layer of cream cheese frosting on the cake layer.

👉Repeat the layering process until you reach the top of your jar.

👉Garnish with heart ❤️ shaped sprinkles or reds velvet crumbs, and/or edible decor of your choice..(I have used the strawberry chocolate).

(Note to make it easy you can use the cake mix from the store to bake the cakes)
