Alright, so I may be a little biased here... but this Pinterest inspired protein packed lentil + bean soup is definitely a new fave of mine!
I know what you're probably thinking... it's 90° out and we're talking soup?! But I promise that this one is totally worth it, and I do have to admit that my heart is definitely wishing for some falling leaves and a cool, crisp breeze...
Ingredients for 8 servings:
☼ 1 tbs olive oil
☼ 2 cloves of garlic, minced
☼ 1 medium yellow onion, diced
☼ 2 large carrots, peeled and diced
☼ 1 15oz can of crushed or diced tomatoes
☼ 1 c dried lentils
☼ 1 15oz can of black beans
☼ 1 tsp chili powder
☼ 1/2 tsp black pepper
☼ 1/2 tsp kosher salt
☼ 1/2 tsp crushed red pepper
☼ 1/2 tsp cumin
☼ 4 cups of low sodium vegetable broth
In a large pot over medium heat, sauté your olive oil and garlic for about one minute. Add in your onion and carrots, and cook for another 5 minutes or so. Add in the rest of your ingredients and cover, allowing the mixture to come to a boil. Reduce to a simmer and continue to cook for about half an hour. Remove from the heat and enjoy warm.
