The recipe this week is a simple and easy lemon artichoke pasta. It only has a few ingredients and it comes together as quickly as it takes to boil the water and cook the pasta!
1 lb of pasta
2 cans quartered artichoke hearts
1/2 cup plus 1/4 cup olive oil, (3/4 cup in total)
zest of 1 lemon
1/3 cup fresh squeezed lemon juice, likely 3-4 lemons depending on size
3 large cloves garlic, smashed
1 bay leaf
1 tsp dried basil
1/2 tsp dried thyme
1 tsp salt
1 tsp black pepper
Combine all the above ingredients, except 1/4 cup of the total olive oil.
Bring to boil, reduce to simmer, cover, and cook,15-20 minutes.
Put your pasta in the water to boil. Before you drain it, keep a bit of the water.
After the sauce cooks, remove the garlic and bay leaf.
Add remaining 1/4 cup olive oil and use a potato masher to combine ingredients into the sauce.
Add to drained pasta, use a bit of the pasta water to adjust sauce consistency.
Sprinkle with lemon zest and parmesan cheese.
