Written by Bhavani Swaminathan @aakanksha_dfw

Amaranth leaves and seeds are very popular in India. Especially since there are a lot of delicacies made with amaranth seeds during festivals as it is considered a fasting food in Indian tradition. Amaranth is a nutritious, gluten-free grain that provides plenty of fiber, protein, and micronutrients. It has also been associated with a number of health benefits, including reduced inflammation, lower cholesterol levels, and increased weight loss. Amaranth can be sprouted to enhance digestion and mineral absorption.

Cooked amaranth can be used in many different dishes. The protein contained in amaranth is of unusually high quality, providing nine grams for one cup of cooked grain. Protein is used in every cell in our bodies and is critical for building muscle mass, supporting neurological function, aiding in digestion, helping balance hormones naturally, and keeping an upbeat mood. So kick start your day with a refreshing amaranth smoothie.
