GOAN MACARONI SOUP

As a kid my Mom and Grandma use to make this comforting soup on a Rainy Day or Cold Days and we use to find it comforting and till date I make this soup when I miss home or on cold days in Vancouver. Feeling nostalgic or feeling blue, there’s always that special pick me up comfort food! Here goes the simple Recipe for this comforting Soup

Goan Macaroni Soup

Ingredients:

1 cube bouillon (Veg/chicken/Beef)

2 tbsp. oil

1/2 medium sized onion (finely chopped)

One small tomato (finely chopped)

One Potato (cut into small cubes)

One small carrot (cut into small cubes

1/4 cup macaroni


Instructions:

In a vessel, add 2 tbsp. oil. Fry onions till soft and translucent. (Don’t brown

Add the bouillon along with 3 cups of water

Add the macaroni and veggies

Cover the vessel with a lid and cook for 10 minutes till the macaroni and veggies are cooked.(Taste and check to see if salt is required ).

Serve it Hot
