Citrus-Anise Glazed Salmon with Mango, Pineapple Salsa & Linguine Pasta

8oz Skinless Salmon

2 Tablespoons EVOO

1 cup Orange Juice

2 Cinnamon Sticks

2 Star Anise

1 Tablespoon Honey

1 Jamaican Mango Small Diced

1/4 Pineapple Small Diced

1 Jalapeño Small Diced (no seeds)

1/2 Red Pepper Small Diced

1 teaspoon Tabasco

1 teaspoon sugar

Salt & Pepper to taste.

Season Salmon with Salt & Pepper

In sauté pan on medium heat add oil. •once oil heats, slowly place Salmon in pan and slightly decrease heat.

Slightly nudge pan and if salmon moves on its own flip salmon and continue to cook 3/4 of the way, should be an average of 3 minutes on both sides.

Remove salmon from pan & reserve for later. •In a small Pan add OJ, Cinnamon, Anise and Honey. Simmer and reduce to a syrupy consistency. •Once reduced use a spoon and coat salmon with glaze and place salmon into oven at 350 degrees to desired internal temperature(with salmon I prefer Medium)

While salmon is in oven prep your mango salsa by combining all ingredients together and stir gently.

Remove salmon from oven, plate and Enjoy.
