Have you ever made a cookie that’s literally as soft as a PILLOW? Seriously... no exaggeration here. I’m talking the fluffiest, softest, most comfortable pillow you can possibly think of... but in cookie form. And not just regular cookie form- banana bread oatmeal cookie form!!! I’m not even kidding you, these cookies are magical. If you have overripe bananas lying around, these are a MUST, and if you don’t, get to the store and pick some up right now!
Ingredients:
☼ 3/4 c butter, melted
☼ 1/2 c granulated sugar
☼ 1/2 c brown sugar, divided
☼ 1 egg
☼ 1 tsp vanilla extract
☼ 2 overripe bananas, mashed
☼ 2 c flour
☼ 1/2 tsp salt
☼ 1 tsp baking soda
☼ 1/2 tsp ground cinnamon
☼ 1 c rolled oats
☼ optional add ins: chocolate chips, walnuts, raisins
How To:
Preheat your oven to 350°. In small bowl, mash your bananas with 1/4 c brown sugar and set aside. In a large bowl, begin creaming together your butter, granulated sugar and remaining brown sugar. Add in your egg and vanilla extract along with your brown sugar-banana mixture. Beat until well combined and set aside. In a separate bowl, sift together your flour, salt, baking soda, cinnamon, and oats. Slowly begin to combine your wet ingredients with your dry and stir until everything is combined. Add in whichever toppings you prefer + bake for 11 minutes.
